This breakfast favorite, also known as a Denver omelet is a great way to enjoy a tasty meal and keep in line with our Triangle Diet. A hard cheese (except cheddar) can be added in the dish. Monterey Jack or Manchego cheese is a good addition.
In a large bowl add the eggs and whisk until fully blended. In a large non-stick pan, apply thin coating of Pam® or any other cooking spray. Add the onions and bell peppers and cook, stirring until they appear slightly transparent, then add the ham and cook for 45 seconds to a minute, continuously stirring. Add one light coat of cooking spray if needed for the next steps. Add half of the whisked eggs, and swirl around pan to form a large circle and covers the bottom of the pan completely. Turn heat to medium low and cover with a lid for about 2 minutes, check to make sure your omelet edges are not browning, if so remove the pan from the heat and reduce the heat setting. When the eggs are solid and cooked almost through, flip the omelet and cook for one more minute on the other side. Fold the omelet onto a plate and serve. Top with salsa, hot sauce, and cheese if desired.
