Cheddar Cheese Taco Shells

If you love taco Tuesday, but want to skip out on the high carb taco shells, then this recipe is for you!  Super easy to make and only 3 ingredients.  You can mix up the spices and choose any protein.  Dress it up however you want.  We went the simple route by getting a rotisserie chicken and filling our cheesy taco shells with chicken, lettuce, avocado and some jalapenos for some extra spice.  Enjoy!

INGREDIENTS:

  • 1/2 cups Cheddar Cheese
  • ¼ tsp Cumin
  • 1/8 tsp Chili Powder

 

INSTRUCTIONS:

  1. Line baking sheet with parchment paper (we sprayed a little PAM cooking spray on our pan to help the parchment paper stick to the pan and not roll up during cooking.)
  2. Place cheese on parchment paper in circles with an even Sprinkle with cumin and chili powder.
  3. Bake for 5-7 You want the edges to be brown and the cheese should start to bubble.
  4. While your cheese cooks, setup wooden spoons so that they sit horizontally across the tops of two upside down.
  5. Remove the pan from the oven and let the cheese sit for about at 1 minute.
  6. Use a spatula to lift the cheese from the pan and hang over the wooden spoons so that they fold into a taco Let hang and cool for about 5 mins or until they harden into shape.

 

Yield: 6 servings
